Chocolate Chewy Brownie Cookies / Keto / Low Carb / Gluten & Grain Free
So today I was really craving something pastry-like. I wasn't quite sure what I was in the mood for, but I wanted it to be simple... I couldn't find anything I was crazy about on Pinterest so threw this together. I feel like it would have been way better if I had an actual hand mixer, but alas, good ole elbow grease had to suffice.
Please note that granulated sweetener would make this way too gritty. I didn't have a powdered sweetener, so I just threw some of my granulated Erythritol into a coffee grinder (cleaned beforehand unless you want a coffee bean hint to your cookies) on fine and voila!
Also, I know that peanuts are not strict keto, but I have had great success adding in a little of my peanut flour here and there.
Ingredients:
- 1/4 C Unsweetened Cocoa Powder
- 1/4 C Peanut Flour
- 1/2 C Powdered Sweetener of Choice ( I used Erythritol )
- 1 tsp Baking Powder
- 1tsp Vanilla Extract
- 2 Eggs
- 1/2 tsp Salt (more or less, I eye balled this)
- 4 Tbsp Butter
- 1 C Almond Flour
Instructions:
- Preheat oven to 350F
- Mix together your sweetener, cocoa powder and peanut flour
- Mix in melted butter with dry mix
- Combine with baking powder, vanilla extract, eggs and salt
- Combine almond flour until you get a thick batter
- Take about a tbsp and put onto parchment paper on your cookie sheet. This should make about 10 cookies
- Flatten and shape to your desire. These will not rise or fluff out. Make as thin or as thick as you would like.
- For thin cookies, bake for about 8-10 mins
- For thicker cookies, bake for about 12-15 mins
- My personal choice & how I made these pictured, I baked for 11, turned the oven off and then let sit in the oven for 2 more mins
